- Beef: 400 g
Seasoning Sauces:
- Beef stock sauce (optional): 10 g
- Sea fish sauce: 6 g
- Green cap sauce: 8 g
- Oyster sauce: 10 g
- Sugar: 10 g
- Dark soy sauce: 2 g
- Beef stock sauce (optional): 10 g
Ingredients Chili Paste
- Yellow chili: 10 g
- Birds eye chili: 5 g
- Karen chili: 5 g
- Dried Jinda chili: 4 g
- Fresh peppercorns: 4 g
- Holy basil flowers: 1 g
- Thai garlic: 40 g
Cooking Steps (The Champion Method)
Step 1 Prepare the Beef
Stir-fry the minced beef in a dry pan over low heat. Cook slowly until the natural beef fat is released. Scoop out excess fat.
Step 2 Add Chili Paste
Add all the pounded chili and garlic mixture to the pan. Stir-fry over high heat until the beef and chili paste develop a rich color.
Step 3 Add Seasoning Sauces
Add all prepared sauces. Stir-fry over medium heat for about 30 seconds.
Step 4 Finish with Basil
Add the holy basil leaves. Toss 45 times, then remove from heat. Serve immediately.

- Seaweed: 10 g
- Thai garlic: 20 g
- Coriander roots: 30 g
- Beef scraps & tendons: 200 g
- Beef bones: 500 g
- Salt: 2 g
- Dried bonito: 5 g
- Green cap sauce: 50 g
- Oyster sauce: 80 g
- Brown sugar: 70 g
- Dark soy sauce: 10 g
Beef Stock Preparation
- Bring 4 liters of water to a boil over medium heat.
- Add all stock ingredients to the pot. Simmer slowly to extract flavors.
- Continue simmering until the liquid reduces to approximately 500 ml (about 612 hours). Strain and keep the liquid. Use this as the base for the Pad Kaphrao seasoning sauce.
